It’s funny, most (white) people I know would never think to set foot in one of the little Mexican groceries around here. Most also think Don Pablo’s and Taco Bell are Mexican food. (Although I would never turn down a trip to either, regardless.) I really want to find and try a Tortilleria – I will go on a hunt, thank you! I will definitely try the oven roasting idea too. Maybe a cast iron dutch oven? It would free up stove top space as well. THANKS Chris! Awesome to hear from you.

If you ever need to buy limes, cilantro, chiles etc., totally worth the cultural experience. Also, produce in general tends to be fresher because basically all cultures besides americans shop for food more regularly so there is lots of turnover. Also, there is probably a little storefront somewhere near the grocery that is a Tortilleria (or there is one in the grocery). They probably don’t speak much English either, but they generally sell by the pound. They will be cheap and fresh and delicious.

Maybe a slight adaptation to solve the more-sweet-potatoes-than-fit-in-a-pan problem: If you have a bigger baking dish that has a cover (or that you can cover with foil, you could try replacing the pan-roasting process (the cover-and-simmer step) with an oven roasting process. Preheat the oven to 375, check in at 10 minutes (they might need longer).
